Lough Gill Distillery is a new distillery located on a scenic 81-acre site on the outskirts of Sligo in the West of Ireland. The site consists of an historic mansion, woodland, six acres of warehousing and a 1 MLPA single malt distillery (with scope for future expansion to 3 MPLA). The business has been in operation since 2014 and the Single Malt whiskey is available for sale under the Athrú brand. Distilling, bonding and bottling is currently undertaken on site.

Commissioning of the distillery was completed in December 2019 and is currently producing five batches per week using our existing Distiller and team. It is planned to increase production over the coming weeks and months and to introduce additional shifts. The distillery was designed by Frilli, is semi-automated and includes a Briggs Lauter tun, 9 No. 15000 litre fermenters and three copper Frilli pot stills. Stills are heated via steam driven external reboilers. The plant is semi-automated with each shift typically run by one Distiller and one Distillery Operator. There is a sophisticated heat recovery and Clean in Place system.

As this is a new distillery operation, it presents a great opportunity for a capable and ambitious brewer/distiller to help shape the current operations and future direction of the distillery, with scope to progress into a management role in due course.


Job Summary:

  • Manage distillery operational shifts including raw material management, distilling, quality and by-products processing. Scope also for involvement in warehousing, maturation, disgorging, blending, and barrel management. Manage third party distilling as required. Supervise a Distillery Operator on a shift by shift basis with expected team growth in the future. Coordinate maintenance of distillery equipment.
  • Co-ordinate and undertake distillery operations to produce the highest quality product possible, maximise levels of production and ensure the efficient use of all resources. Contribute to the overall operational direction and consistency to enhance productivity, quality, safety, environmental, and compliance.

Required Experience & Education

  • A minimum of three years’ experience working in a brewery or distillery of comparable scale is a requirement
  • A recognised industry qualification (Degree, IBD or equivalent) is a requirement
  • Experience of using plant control software systems and MS Office packages is a requirement
  • Other technical, engineering or chemical qualifications and/or experience would be a positive
  • Displayed understanding of distilling operations, supply chain processes, continuous improvement methodologies, as well as quality, safety and environmental practices
  • Ability to diagnose manufacturing issues and problem solve solutions to increase operational efficiencies and cost control
