Level/Salary range: £25k-£30k depending on experience 
Position type: Full time – 40 hrs per week.

Company Background

Jim and Tonic is a sustainable urban distillery that makes small batch gin onsite at our bar venues in Elephant and Castle, Mayfair and Dalston in London. The gin is also sold and promoted through our successful events business. Gin is our main focus currently, but we also make other products such as Triple Sec, Vodka & Coffee Liqueur, making use of by-products from the distilling process where possible. We will be opening a dedicated production distillery in London soon and branch out into the production of other spirits which the successful candidate would become an integral part of.

The Job

The business is expanding rapidly with new online listings, awards and trade accounts opening and we need someone to take over spirit production at our main site in Elephant and Castle and less frequently at our other sites in Mayfair and Dalston. The current distiller is leaving in September and we would like to ensure a smooth transition and shifting of responsibilities, we will also be employing a senior distiller /production manager at some point to add to the distilling team.

Responsibilities

  • Distilling in accordance with the schedule set by the operations manager
  • Training and development as overseen by the current distiller
  • On board the new stock management system with the current distiller
  • Maintain and develop the HACCP plan and procedures, operating to these standards
  • Create and improve recipes subject to demand
  • Purchase and source raw materials in line with our sustainability goals
  • Manage outsourced distillation requirements
  • Maintain existing distilling equipment and advise on any further purchases
  • Quality control

Requirements 

  • At least 6 months distillation experience preferred
  • If not, General Certificate in Distillation or equivalent required
  • A keen interest in spirits and the science of distillation
  • A background in science or engineering (a degree is preferred but not mandatory)
  • Fluent written and spoken English, good attention to detail, strong excel and numeracy skills
  • Physical ability to move heavy objects
