One of the benefi ts of having worked in the whisky industry is that you often get the chance to revisit areas of Scotland you have been to before. You can be re-energised by past memories and this is such an occasion as I head back up the notorious A9 to visit Teaninich distillery situated in Alness some twenty miles north of Inverness.

The British fungus: The brewing science of Brettanomyces

Brettanomyces is a genus of non-Saccharomyces yeast of great importance to the brewing industry. It was named by N H Claussen, Director of the Carlsberg Laboratory, in a paper published in the Journal of the Institute of Brewing in 1904.

The visitor to Harvey & Sons Bridge Wharf Brewery in Lewes, Sussex is imbued with a sense of timelessness, for Harvey’s way of doing things harks back to a previous era when brewing was ‘a gentleman’s occupation’. The serenity of the location on the banks of the River Ouse in Lewes, and the traditional brewhouse therein, disguises the fact that this totally independent, quintessentially English company is facing challenges presented by 21st century drinkers.

Sodium in beer - Beyond the basic pH check

Sodium is not an element usually found in beer at significant levels. Generally, 0.5-3.5 mg/500mL is present in finished beer which comes from raw materials such as malt and hops. But there is another potential and unacceptable source of sodium in beer – cleaning chemicals and more specifically, sodium hydroxide (NaOH).

Enlightenment in Wrocław - EBC Symposium 2016

As one of Europe’s ‘Capitals of Culture’ for 2016, the city of Wrocław made a fi ne location for September’s EBC symposium. Positioned towards the western boarder of modern day Poland, the city of Wrocław has at times also been Czech and German; a fact most evident in the cities spectacular medieval architecture, and its wonderful beer.
